- 8 flour or corn tortillas
- 2 cups shredded cheddar or Monterey Jack cheese
- 1 small onion, diced
- 2 cups red enchilada sauce (homemade or store-bought)
- 1 tsp cumin
- 1 tsp chili powder
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh cilantro and lime for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and garlic, then add meat or beans, cumin, chili powder, salt, and pepper. Cook until done.
- Warm tortillas, fill with mixture and cheese, roll tightly, place seam-side down.
- Pour sauce over enchiladas, top with more cheese.
- Cover with foil and bake for 20 minutes. Uncover and bake for 10 more.
- Let rest for 5 minutes, garnish, and serve.
